Longmans extra sharp cheddar
What comes to mind when I think of this cheese is a sea of bland to mediocre cheeses known to most supermarket shoppers as cheddar. Unfortunately, the name cheddar is not protected and therefore is widely used and abused. The latest edition to our cheese case is an authentic farmhouse cheddar from Somerset where the original recipe for cheddar was created. An authentic farmhouse cheddar is straw colored and comes in a large drum shape, firm in texture, and tastes like buttermilk, nuts, tart apples with a hint of lemon rind on the finish.
